HOW I'M CELEBRATING VALENTINES DAY + EASY & CUTE RECIPE



It's Valentine's weeeeeeek and love is in the air 😍 I'm sharing all the ways I'll be celebrating this year! Note: boyfriend not required ;)




  • Make sure I've got fresh flowers around. If there's ever a time to have fresh flowers it's this week! My flowers Matt got me for our anniversary are blooming and looking beautiful as ever. They make the kitchen area look extra happy! Life hack: Trader Joe's always has beautiful bouquets at very reasonable prices. 
  • Decorate the apartment. Knowing I was going to be decorating for Valentine's Day definitely made putting away all the Christmas decor a lot easier. I love decorating my apartment for all different holidays. I updated the quotes/phrases on my letter board and light box and picked up a few small things at Target. Nothing too crazy, but I know I'll keep these items for next year too! It took everything in me not take a trip to Home Goods for more decor. 
  • Send cards to all my Galentine's. I don't know about you but I LOVE handwritten cards and just receiving cards in the mail in general. It's always a nice change of pace than bills, student loans, and junk mail galore. I picked up a pack of cute cards from Target and wrote a little note to some of my favorite gals. 
  • Make a cute & fun Valentine's Day recipe. Honestly, I just like any excuse to look up cute recipes on Pinterest and play with my new KitchenAid. I'm sharing the recipe to the treat I made this year below! This is the perfect treat to bring to any party, keep in the break room at work, or just keep out in your kitchen and keep it all to yourself (although don't recommend). 
  • Exchange cards & small treats with Matt. We don't ever do big gifts since our anniversary is the week before and we're usually still recovering from Christmas expenses each year. A sweet and thoughtful handwritten card means so much more to me than any gift and I always save all of my cards each year. We usually get each other some other smaller treats like chocolate covered strawberries or wine (for me) and new hot sauce gift sets (for matt) πŸ˜‚.  This year I did get the 100 scratch off bucket list dates from my LAST POST that I'm super excited about!
  • Give my animals extra treats or surprise them with a new toy. Our cat and dog are basically our children so they are just as much our Valentines as me and Matt are to each other, duh. I like to pick up treats and toys from TJ Maxx, Marshall's or Home Goods - they always have a great selection and are very affordable! 
  • Open up the bottle of wine I've been saving. I can't be the only one who has a certain bottle (or bottles) of wine they've been saving for a special occasion. What better occasion to cork that baby open than the day of love? Treat yoooo self. I think I'll pop open some RosΓ© because that seems appropriate, right?!
  • Cook a fancy meal. Since Matt and I's anniversary is the week before Valentine's Day, we've started our own tradition of cooking a nice dinner together instead of going out to an expensive dinner two weeks in a row. Since moving in together, we cook together quite a bit and it's quickly become one of my favorite hobbies we do together but it's just a little extra special on Valentines Day. We usually make scallops (we LOVE seafood) with some sort of veggies and a side accompanied with wine (of course). 

RED VELVET RICE KRISPY TREATS
Ingredients:

  • 6 cups of Rice Krispy cereal
  • 1 bag of mini marshmallows (10.5 oz)
  • 3 Tbsp butter 
  • 1 tsp vanilla extract
  • 1/2 Cup of dry Red Velvet cake mix
  • White chocolate baking chips
  • Optional: Valentine's Day cookie cutters (I found mine in the Valentine's Day section of Target for like $2)
Instructions: 
  1.  Butter a 9x13 pan OR your cookie cutters
  2. Measure cereal and set aside
  3. In a large microwave proof bowl, add marshmallows, butter, and vanilla extract. Microwave for 1 min 30 sec, remove and stir. Continue heating in 20 second increments until smooth.
  4. Add cake mix and stir. Add more or less depending on how strong of a taste you want. I thought the 1/2 cup was the perfect amount - not too overpowering. 
  5. Slowly add in cereal and gently fold until coated
  6. Dip into your buttered pan and press firmly until flat OR lay onto a plate and use cookie cutters to keep cutting out your shapes. Lay onto parchment paper or on a greased pan so the treats don't stick. I also buttered my hands so the treats would't stick. Do this QUICKLY while the mixture is warm.
  7. Drizzle melted white chocolate as desired (I clearly need to get better at this step).

  3. Some great festive things you do. The boys worked on their class valentines over the weekend and we dropped some off in the mail for their cousins who live in different states.
    We don't do much. Dinner out is too crazy on that day and we just finished celebrating our birthdays last week. So we take Valentines Day kinda easy.

  13. I wish I had saw this before Valentine's day but I love all the ideas on celebrating! That time of year is perfect for fresh flowers and Trader Joe's is my favorite place to get them too. And the red velvet rice krispy treats look so cute! I'll be saving this for next year!
