Ok, but seriously - this one of my favorite recipes I've made (and by far the easiest) and I can't stop eating it. Also, I used the Trader Joe's Organic Yellow Lentil & Brown Rice Pasta so it's definitely a healthier alternative than regular noodles. This is a perfect side to bring to any type of potluck or get together and it's so easy it's actually dumb. This dish is so light and refreshing and has the perfect hints of sweet and heat. I'll be making this again reaaaaaaal soon.
INGREDIENTS:
(All from Trader Joe's)
- 1 package of Trader Joe's Organic Yellow Lentil & Brown Rice Pasta
- 1 package of shredded cabbage
- 1/2 package shredded carrots
- 2 red bell peppers, very thinly sliced (forgot to add this in mine, oops)
- 1 cup (or more to your taste) of Trader Joe's Spicy Peanut Vinaigrette
- Optional: handful of fresh chopped cilantro
- Optional: handful of crushed peanuts
DIRECTIONS:
- Prepare pasta according to package directions. I usually cook this particular type of pasta about 5-10 minutes longer just because the consistency is quite thicker than normal pasta
- Once pasta is done cooking, transfer into a large bowl of ice water to cool (about 10 min)
- Once cooled, drain thoroughly to a large mixing bowl
- Add cabbage, carrots, bell peppers, and vinaigrette
- Gently toss to combine
- Adjust dressing/cilantro if desired
- Cover and chill 30 minutes
- Garnish with crushed peanuts, if desired, upon serving
