I was in the mood for some Mexican (I'm pretty much always in the mood for Mexican) so I opted for some turkey taco lettuce wraps instead of regular tacos. So easy and so good!
Here's what you'll need:
1 lb of lean ground turkey
2 cloves of garlic
1 head of iceberg or romaine lettuce leaves
3/4 cup yellow onion
1/2 cup chicken broth, low-sodium
1/2 cup tomato sauce
1 tbsp. Chili powder
1/2 tsp Paprika
1 tsp ground cumin (I didn't have cumin so used taco seasoning instead!)
Salt and Pepper to taste
Any additional toppings of your choosing! I added tomatoes, corn, guac, salsa, and shredded cheese.
Directions:
- Heat olive oil in a non-stick pan over medium-high heat
- Add onion and sauté for 2 minutes
- add turkey and garlic. Season with salt and papper and cook - tossing and breaking up turkey - until cooked through (about 5 minutes)
- Add chili powder, cumin, paprika, tomato sauce, chicken broth. Reduce to simmer and cook about 5 minutes until sauce has reduced
- Serve over lettuce leaves with toppings of your choosing
- Enjoy!
